Replace rusted knives or face action: FSSAI warns eateries
text_fieldsNew Delhi: The Food Safety and Standards Authority of India (FSSAI) has issued a strict warning to hotels, catering units and food processing establishments across the country over the use of rusted, damaged and poorly maintained knives, peelers and other food-contact equipment.
The regulator has directed food businesses to replace such tools before they deteriorate and warned that violations could invite action under the Food Safety and Standards Act, 2006.
The advisory is based on Schedule 4 of food safety regulations, which mandates that all equipment and utensils coming into direct contact with food must be made of non-toxic, non-corrosive materials and maintained in a hygienic condition. FSSAI said inspections have found rusted, damaged and painted knives and blades being used in several food establishments across the country.
According to the authority, the use of rusted or chipped equipment can lead to contamination of food through metal particles, chemicals and harmful microorganisms, creating serious health risks for consumers.
As part of the directive, FSSAI has laid down five key requirements for food business operators. First, only food-grade, rust-resistant knives, blades and similar tools should be used for food preparation. Second, all such equipment must be kept clean, durable and free from paint, cracks or other forms of damage. Third, rusted, broken or defective knives and blades must be removed from kitchens immediately. Fourth, establishments must maintain a proper system for the regular cleaning and sanitisation of all food-contact equipment. Fifth, violations of these instructions will attract stringent legal action under the Food Safety and Standards Act, 2006.
The regulator said the measures are aimed at strengthening hygiene standards and ensuring safer food handling practices across hotels, catering services and food processing facilities nationwide.
